A Legacy of Dough
On May 16th, 2024, Franco Pepe (Pepe in Grani, Caiazzo) takes over the wood-fired ovens at Olivo, Palm Hills to extol the powerful simplicity of meticulously honed techniques and seasonal local ingredients to produce wondrous flavors. Franco represents the third generation of a family of bakers, inheriting a powerful “Legacy of Dough” which he manifested into an inspired new vision of pizza. Setting experimentation, craftsmanship and hospitality front and center, followed closely by a devotion to the flavors and ingredients of the Campania region, his homeland.
